Jason,
Generally speaking, the lenses best suited for sports photography (fast
teles) are not great for landscapes (wide slow) and vice-versa. (BTW,
'fast' means larger aperture like the f2.8 and 'slow' is a smaller
aperture like the f/5.6 - sorry if you already knew this but I didn't
want to assume)
Also, when you see a range of aperture values, such as "f/3.5-5" it
means that the max. aperture varies based on zoom position; in this case
f3.5 when at 18mm and f5 at 55mm. This threw me off for the longest
time when I was getting started. ;-)
I shoot Nikon and my 'go-to' glass is the f2.8 70-200. I shoot mostly
live events and the fast aperture is a must have for low-light situation
or capturing fast action. The longer reach of the 200-500 would def. be
useful at times but the f5.6 would be a killer for me.
Both of the lenses you have are good starters (some folks would refer to
them as 'kit lenses' meaning they are often the lens you get when you
buy the body+lens as a kit). I noticed a dramatic improvement in
sharpness when I upgraded from my first kit lenses. Yes, the old saying
is (mostly) true -- you get what you pay for.
However, camera settings can have a much greater influence on
'sharpness'. Most importantly, shutter speed and to a lesser extent
aperture and ISO speed. A good rule of thumb is to shoot "2x faster
than your zoom level" - For example, if you are shooting with a 55m lens
you need at least 1/100s shutter speed. Or if you have the 200 on and
you are zoomed all the way in you need 1/400s as the minimum. Beyond
this your shooting technique, how you hold the camera when shooting can
enter into the equation. Frankly, the heavier glass, like the f2.8
70-200, makes it easier for me to steady the camera as it doesn't bounce
around as much as a lighter body+lens combination might.
Finally, remember that putting FX glass on a DX body will give you a 1.5
'crop factor'. Meaning that a 70-200mm FX lens will act like a
'105-300' zoom on a DX body.
I would second Matt's suggestion of renting the lenses before you buy.
